A perennial herbaceous plant with an upright habit, the cuckoo flower can reach a total height of 70 cm.

The plant begins its flowering period in mid-May and is characterized by delicate pinkish inflorescences.

The young shoots of the cuckoo flower are edible and can be eaten stewed like spinach. They can also be added to omelettes or to fillings with fresh pasta or savory pies.
