Since ancient times this species, widespread from the Black Sea to the Mediterranean, from the English Channel to the European Atlantic coasts, was collected on the rocks and cliffs along the seafront to be consumed as a vegetable in salads.
Crithmum maritimum is a perennial edible plant with ribbed stems and fleshy foliage.
Leaves, stems and even inflorescences can be eaten in salads, cooked in butter or preserved in pickle.
In Spain and Greece Rock samphire is still used today as an aromatic herb in fish dishes.
