Both root and leaves were used as a traditional medicine during the Middle Ages.The root was used as a condiment on meats in Germany, Scandinavia, and Britain.

The young leaves can be eaten in salads. Its roots, rich in calcium, sodium, magnesium and vitamin C, are perfect to create sauces or to be eaten raw in salads.

Once exposed to air or heat, horseradish loses its pungency, darkens in color, and develops a bitter flavor.

Horseradish helps the garden in its natural defense against parasites, its roots in fact drive away nematodes and decrease bacteria (biofumigant action), also attracting ladybirds that feed on aphids.

*At the same time as the autumn/winter period, the plant may appear sparse or devoid of vegetation.
